Default Email

Is there a way to select a different default email in NS? Currently, when we are preparing a quote, the default email is listed as the main email for the company. We want the email for the contact to be our default. I am unable to locate any documentation on that. How would one accomplish that?

For clarification, we prepare the quote, and when complete, go to the messages tab. We then click email, and the default email comes in as the default email for the company, not for our contact at that company. This may be picky, but it's important that the contact gets the information, since they are the one who requested the quote!
