My guess is that they are referring to the Suite Answers section way down on the bottom right labeled Additional Resources. Probably the Videos section?

If you customize your Sales Order form and remove the Payment Method, that "should" cause it to generate an invoice instead of a cash sale. If you have a sandbox, should be easy to test

Paul, I believe a workflow with an Event Type of COPY can be used to clear the fields needed. For the line item fields, you would need to use a Sublist Action Group to access and clear those fields
