Workflow to Set Field During Special Order PO Creation

I need to set a field on a special order when it's created from a sales order approval (like a manual After Record Submit).  I can't figure out the right trigger/event type/context to make this happen.  I want to set the field so that a user doesn't have to edit the SOPO to change it.

I was able to get a workflow to set the field the way I want upon the user editing the PO (Before User Edit), so I know the field can be set.
