Date Condition not working on Workflow Transition

I'm having a hard time getting a date condition to work for one of my workflows.

I would like for the workflow to transition XX days prior to the date on a custom field.

So, I was thinking this would work: {custentity37} = {today} + 7
It didn't...

So, I tested these....
If I set it up like this: {custentity37} = '11/5/2012' it works.
If I set it up like this: {custentity37} = {today} it does not work.

What's up with that?:h_a_w:

I'd rather not set up a scheduled transition if I can just reference another field.
