Clear the Ship Date field on POs

How do I clear the Ship Date on create of a Purchase Order? I tried creating a Workflow that runs at all sorts of stages, but can't find the right time...

The Date defaults to today and populates the Ship Date field. As I refresh (when creating a PO), I can see that the date fields are blank, and then a second later after loading the Date populates and the Ship Date as well.

I tried to do After Sourcing of the Date field, but that didn't seem to work. (I even tried creating an event After Sourcing of the Ship Date field and that didn't work, either...)
