can't see state field in the drop down for current record from field

I'm customizing the requisition approval workflow that comes in the advanced procurement bundle. I need to be able to reroute the approval anytime the requisition is edited during the approval process, before it gets to the final approval. I made a transition from the pending approval state to a new custom state that is triggered on Before Record Submit, Event Type: Edit. In this new state I added a field to store the next approver and called it editor next approver. In this state I look at the purchase approver for the user who edited the requisition and set the
