Create Workflow on Opportunity Status field

We need to create a workflow - If Opportunity Status is idle for 5 days, send email to distribution list(Group) with a template. Scenarios are: 1. Escalate - If new opportunities are created and Opp status is idle for 5 days. 2. Escalate- If status is changed and it stays in new status for 5 days

Current workflow works like this:
Upon workflow entry (Create, view or update), Set a delay of 5 days then send email to group.Transit to the initial state if field is updated. If status closed then end the workflow. Not fully convinced with the workflow and difficult to test. For testing purpose i am setting delay of 1 hr. I dont see record entering workflow on update of status field.
