Force a language on an advanced template - either form-level or field-level?

Creating a packing slip.  Shipment can either be to an English or French-speaking client.  Whenever we use script or "Print in Customer Locale" button the entire document comes out in the proper language.

Here's the twist.

I want to source certain fields (item name) always in English - even if the customer is set to French.

Is there a method to allow this inside of the advanced template?  I've tried setting the locale to English or French but that does not do what I want.
