Decrementing A Purchase Order

Does anyone know how to set up some sort of transaction or report to be decremented everytime a sale has been made for that particular customer?

For example, we have a customer that prepays us an amount and as we provide services for that customer, we need to decrement the amount of that service transaction from the original prepaid amount.

Any help would be greatly appreciated!
