Is there a way to adjust an end date on a project?

I'm running into an issue where I have a task that we give the resource 3 weeks to complete, but the actual work effort is only about 6-8 hours. When we have an "as soon as possible" start date and add the work effort, it basically shows the end date to be one day later. I want to give them more time to complete it, but the work effort isn't 120 hours, so I don't want to inflate my estimates. Any way around this?
