Best/Quickest way to create Letter templates with tags?

I have  over 200 custom fields that I potentially want to reference into letter templates - maybe not all at the same time in every template but alot.

I presently download my custom fields from the set up page as using the csv source file has no order and is across columns and not in rows which is crazy to me - anyhow..

I currently create my word document and have to manually use inset merge field in Word and have to type each field name in long hand.

This is very laborious and surely there is a better way to insert my tags into my word template.
