Restructuring Service Items - Best Practices

We are a professional services company that does work as a partner with HP helping clients install HP software.
When implementing Netsuite, we set up our service items in a fairly granular manner. Originally, we elected to pursue this path in the belief that this would allow us to produce more detailed reports. In retrospect, we have learned, while implementing Advanced Job Tracking, that this presents some unanticipated complexities with respect to employees billing time to various Jobs. Therefore, we would like to back up and only use a handful of high level service items that parallel our Departments or Lines of Business.
