Third Party Access

What is a best practice for third party access.  We have worked with several 3P's and are currently integrated with some.  We have learned a few lessons and are curious about access.  Particularly the kind of blanket access that is needed sometime to preform the task.  For example, web development.  We are not particularly interested in the developers seeing sales figures.  Everything has a context of course and we assume and enforce professionalism but for long term relationships what is a good set of role definitions to restrict more sensitive data?  What is to stop the 3P from seeing figures
