GULP / Vinson SCA - Best way to keep track of what changes were made in Modules?

I'm new to the SCA Vinson use of GULP. I've been installing Vinson for SiteBuilder on a number of sites, and will do so more and more in the coming weeks and months. I'll typically install about 10% if the total installs of RC versions and the same is holding true so far for Vinson checkout for SiteBuilder. So, it's more than just a few.

I'm really starting to like Vinson and the way it is organized, though still have a way to go until I can do all the things with it I could do with RC 205.

One thing I really liked about RC 205 is that I only had to copy the files that I wanted to change to the Custom Checkout folder. Then I'd download those files, make the changes and customizations, and upload.
