How to manually process credit card data

We have our own merchant account: Do we still need to use one of the suggested payment providers? We manually process credit cards in our office and would also like to do it this way with our new online shop...

We hoped that when someone purchased an item the credit card info was given along with the pending sales order, so we can process the card data manually.

Has anyone experience with this?
