Email Capture - Case Management

Hello!

We want to accommodate our internal staff when they email a problem.  We want to use email capture to set up the case automatically.  We eventually will use the help desk form but in conjunction with email capture.  Can we set it up so that the Company is a specified deal number (the one we put in the support set up default) but it captures the email address and corresponding contact info from the employee record (or some other record)?  The only way we can get it to default to the specified company is by putting the email addresses on
