Help - cant turn off an item option

I have not had to change item options since the old way when it was done in the setup section.  Now it is in the item itself.  I have an item, not matrix, that somehow had a color option clicked in the custom tab and I cant unselect it.  I can change it to another option, like design or size, but I cant just unselect all options - this means we cant sell this item.
