Locking Roles

Hi.

Is there a way of Locking roles down far enough that you can separate between all entry's be it sales or credit to do with Inventory Items and Non Inventory Items?

Reason for this is we are introducing a stock controller who will deal with the sending and receiving of all stock items and I wish to still allow other people access to Non inventory items.

At present i have looked in the customisation of roles and I can only restrict to Items.

Any suggestions?:(
