Ethnicity List in Employee Related Lists

Hi,

I am trying to create the list of ethnicities for the Ethnicity field on my employee records.

However, if I go to Setup -> Accounting -> Employee Related Lists and Click "New" I only have the following options:

Visa Type
Resident Status
Education
Employee Status
Marital Status
Employee Type


None of these relate to the Ethnicity field.

Am I missing something obvious or do I have a defect??
