Inventory - removal point?

I find that my website is selling more product that I actually have available in inventory. I have my preferences set to NOT sell backordered items but to YES list that an item is out of stock. However, before it is even listed as out-of-stock I have already oversold.   I've looked all over for a setting for this and can't find where to change it modify it for testing...

Is there a place where I can set so the product is removed from inventory as soon as it's added to the cart instead of when the order is completed?


I may have 10 pending orders all ordering the same one product left in stock. . . the result is one complete order and happy person and 9 customers who are upset that they thought that they ordered it bc. there was no 'out of stock' posted and they get left mad and empty handed.
