Unable to source item field for Transaction Column Field

My requirement is to include the Manufacturers part number (MPN) on Estimates, Sales Orders and Purchase Orders.

I thought I would be able to add a Transaction Column Field to a Custom Transaction Form, guessing I went with Free-Form Text and selected 'Item' from the Source List.

My problem is the Source From list is very limited and does not include an option for MPN or a number of other Item Fields.
