Exposing fields as search criteria and results

Fact: Not all fields are exposed in the UI for search criteria and results.

Opinion: Getting them exposed is a big deal, which signals that doing so is more complex than I imagine.

Help: Assuming my opinion is accurate, can you help me understand why exposing fields is so onerous?
