Sourcing Contacts in a List - Display Issue

Every estimate we do is to a company, and we want to include the contact that we're quoting in the header of the estimate.  I have a custom field that sources from the contacts list so that our sales reps can select who at the customer they are actually quoting, but whenever I use the field it prints on the PDF as "123456 CUSTOMER: Contact Name".  I just want the name, not the customer information.

Can't find anything about how to not show the customer information in that field.  Any help?
