Setting default and/or allowed shipping methods

We have some items that are too heavy or valuable to go through the postal system, and therefore want any order through the website that has these items to select from our list of UPS integrated shipping options. Is there a way to do this?

It seems there needs to be an option on inventory items where rather than just shipping cost (not much use if you dont know where you are shipping to!) there should be a way of flagging the available methods.
