Number of Days to Shipment - set up - Question.

The information here says:
The actual ship date updates when the order is fulfilled.

Using UPS integrated shipping labels - does this mean that if we fulfill and order on Saturday - that it will show a ship date of Saturday - even though UPS only picks up on Monday?

Also if we set a Cutoff Time for Shipments at 2PM, but then fulfill at 6PM that day, even though UPS doesn't pick up till the next day, will it still show the day we processed as the ship date?
