Future Orders?

I have an order from a customer who does not want me to ship until mid January. However, I can't a way to load the order without it showing up as an order to be fulfilled. If I make is awaiting approval then I have to remember when to approve it and if I sell the stock in the mean time the system will not prompt me to purchase any stock to cover the order.

Is there any way to load on future orders ad have them release for fulfilment on a particular date?
