Default Ship Date

When a customer place an order online, the "Ship Date" entry under "Shipping" tab is automatically entered a few days away.  Since we have a fast order fulfillment process, I'd like to change the default date to 48 hours (or 2 calendar days) away.  Anyone knows how I can do that??
