Shipping Carrier = more. We don't need it!

There is a new field in Shipping tab of Sales Order i.e Shipping Carrier is UPS or More. We are not using UPS and it is an extra step to fill that in before selecting Ship Via. 

Can I add in more Carriers?
Can I disable the SHOW in Shipping Carrier? I have tried to customise the form but I am not able to "un show".

If I leave it as MORE, and select the Ship Via as per what we were doing before, will that be ok? Is there any implication on any other features somewhere else?
