Manual Shipping Rate Tables

We don't like the UPS/More drop down box in the shopping cart. To get away from this we are considering building our own rate table to ping that mirrors UPS rates.  My understanding is that if we create our own tables and don't use UPS real time rates, we can create our own generic shipping methods that don't have to use UPS branded names.  That would also get rid of the UPS/More drop down list.

Has anyone tried doing this? I would appreciate hearing about your experience.
