Can't change name of shipping item?

I need to set up a new shipping item with a custom name.  I have done this is the past with no problem.  Now, when I select the shipping method alongside UPS Real-time rate it auto-populates both the Ship Name and Display Name/Code fields and grays them out where I can't edit this. 
Any way to fix this?
