Formula for time item last sold

Im creating a saved search which will be used in conjunction with web services. It basically returns items with their available stock level. What i also need is for it to only return items where the available stock level has changed within say the last hour. Im assuming i could get this info by using the summary section and searching on sales orders created within that hour. Could someone maybe help me out with this please?
