Custom Report/Search to show days between SO approval and Project plan stage

In order to comply with a quality assessment we need to monitor the time interval between SO approval date (which I know that I can obtain from system notes) and the transition of a project to the planning phase (also recorded in system notes.)

I'm not sure where to begin and would appreciate some tips to get me started.
