Unable to save fulfillment with packages

I'm getting the dreaded:

You do not have permissions to set a value for element saturdaydeliveryups due to one of the following reasons: 1) The field is read-only; 2) An associated feature is disabled; 3) The field is available either when a record is created or updated, but not in both cases.



Error when try to save a fulfillment record with packages.
What's strange is the the error relates to a UPS field but my SO that I generated the fulfillment from has a null shipping method, there isn't anything selected.
