How to restrict my customers "item list" in the customer center?

We are exploring the customer center as a tool for our repeat customers to bypass our inside sales team and enter thier own orders online.  I want to be able to assign a restricted "list" of inventory items to a particular customer.  As of now, a customer sees our entire inventory.  Can this be done?
