How to Add Color Options to a Web Store Item

Hi,
Has anyone added a custom color option, i.e. the customer gets to pick Red or Blue, for example, on a particular item, but not on others... w/o the NS Advanced Inventory - Matrix Item Option?

I'd be much obliged if you could save me the trial-and-error learning curve, and throw in the down-sides you may have encountered.
