pdf contract merge - non-editable for recipient?

I want to merge contact fields into a contract and e-mail it to a customer. The template is all set up. I created a pdf form using adobe pro, as described in help, with my contract text, and I can merge the fields into the pdf document, but...

those fields remain editable when it gets to the customer. I want the resulting document to be a standard .pdf which cannot be edited. What am I doing wrong?
