Opportunities on Transactions

When I create a quote or a sales order, I want to link it to a customer's opportunity record, but the list of opportunities doesn't show in the drop-down menu. There is definitely an opportunity on the customer record, and I'm creating sales orders and quotes for that same customer, but it shows no opportunities on the quote/order xaction form. Do the opp's stop showing up once they're closed-won?
