Help sending a transaction email to contact/employees

I was wondering if anyone knows if this can be done.  Awhile back, I remember seeing all of our employees show up in the email contact dropdown for every customer record.  Then, it disappeared. 

Is there a way to set it up so I can email employees a copy of a transaction inside a customer record instead of the customer?  I am trying to set it up so I can email a transaction order to the person responsible for processing it.

I hope that makes sense.
