Disable Auto-Fill

Does anyone know of a way to disable certain fields from auto-filling based on the customer fields.  For instance if a customer has an assigned "sales rep" and someone creates a new estimate, the "sales rep" is automatically filled in.  Can this be disabled? At the transaction form level?
