Cash counter sale - negative quanties and substitutions

Hi.
Just working around a problem.

I'm selling a product we make, customer in front of me, but the assembly (a Hydroponic System made of 20 items) needs a substitute from a small bottle of nutrient in the assembly, to a large one.

Ideally we would have entered the cash sale as +1 of the assembly, -1 of the small bottle to remove it from the assembly, and +1 of the large bottle.

Netsuite Cash Sales won't let me do a negative quantity.

Is there a better way to do this?
