how to: mark a sales order paid before fulfilled...(prepaid)

How do I mark a sales order paid before fulfilled.
I know when a order comes in from our website this happens automatic.
but on orders we manually enter I still want to charge before we pick the items.
Is this possible.
can you describe the place where I might changed this in our setting with out disturbing the set-up for our website.
