Adding Amount Adjustment to Invoice

On our invoices, we need a way to note when an adjustment has been made to the price.  These adjustments include discounts given at the time of sale, payments made to the customer for a delay in the project, etc.  These discounts do not have a set amount nor a set percentage, so how to do I add them as an item so we can put them on the invoice?
