Updating Sales Order or create new?

Hi there:
I'm a newbie to NS.  Was wondering if there's a best practice for this- in our business, we often have change orders to won opportunities.  My question is, is it better to create a new SO for the updated amount (say, the addition of 50K to a 100K project, which would be one SO for 100K and another for 50K) or update the original SO (one SO for 150K)?

We're thinking it would be better to update the orginal SO, but not sure.
