Changes to Sales Order that has been billed

We raised a Sales Order (Cash Sale) - all of the lines except one have been fulfilled (the remaining line is on Back Order).

The entire order has been billed.

The customer wishes to change the one line that is on back order to another item.

What is the best way to achieve this?
