Highlight text on PDF layouts?

When Netsuite sends an invoice the PDF has the payment terms highlighted but everything else is white.

I want to customise my PDF layout for Purchase Orders to highlight any special instructions to our supplier. When I go to custom PDF layouts, if I enter any colour in the fill colour it colourises all boxes not just the box highlighted.

How do I highlight the text in the box for special instructions and leave all the other text as normal?
