Converting unsorted inventory lots to sorted inventory items

I purchase large lots of items (say 3000 pieces) that are unsorted.  There are 12 different items mixed together in these large lots.

After receiving I'll send those items to a specialist vendor who will sort them and return them packaged in the 12 different categories. They'll then be recorded in inventory as the proper product categories and sold. 

How on earth can I show this workflow?
