Price Levels

Struggling here.
Using the basic out of the box price levels:

Base Price
Alt Price 1
Alt Price 2
Alt Price 3
Alt Price 4

I enter a value in any of those fields.
When I go to a Sales order - it automatically defaults to the Price Level selected above.
Can I rename/create my own price and can I  have the price level not be the default cost on a sales order?  Rather it would be one of the options on "Price Level" on Sales Order.
