Restrict access to certain fields/subtabs

Good morning,
I'm trying to figure out if I can lock down certain fields or subtabs only to certain users, or maybe even roles.
I've been looking all over the Manager Users/Roles, Entry forms and cannot find anything.

What am I missing? Is this possible? I would think it is.
