Hide Company Name on top of Page

How do we replace the company name that precedes the user name on the top right-hand side of the screen?

I am assuming that it feeds from the company information, but after having gone through implementation and already set up many forms, etc, I don't want to risk removing the company name as it is displayed on numerous templates.

Where would this field be displayed other than the screen? What templates feed from the same field?
