Cash Sale Approval

Does anyone know how I might create a cash sale from an SO without having the $$ post to the income GL?  We'd like to run a credit card at time of shipping,  which basically means billing the order, but want to review the sale before it hits the income GL account.  We have investigated using a Deposit, but its not nearly as smooth as we'd like.
